Mexican

1.Mexican chilli corn pizza
                    
  Ingredients:-
                                 1.Pizza base
                    Ingredients for stuffing
                      1.One cup rajma
                                 2.One small chopped onion
                                 3.Two spoon tomato ketchup
                                 4.Two spoon butter 
                                 5.Two spoon oil
                                 6. Salt according to taste
                  Ingredients for topping
                      1.Three small chopped tomato
                                 2.Two cup cooked mecca
                                 3.One small chopped capsicum
                                 4.Four small chopped green onion
                                 5.Hot sauce
               Method:-
                     Soak the rajma for whole night.Boil it in pressure cooker and sieve it.

Now heat the pan and pour oil in it .fry onion in it till light brown.Add rajma, butter,and salt in it and cook it for 5 minutes.Mash it lightly.

Now spread this mixture on pizza base. Pour hot sauce on it.Add tomato,capsicum and mecca on it.Spread green onion in between. cover it with red chilli and onion.Bake it in oven for 5 minutes on 200 degree. Serve it hot. 

2. Mexican rice
              
Ingredients:-
                 1.One cup rice
                        2.One small chopped rice
                        3.Three flax garlic
                        4.Three slice onion
                        5.One cup small chopped cauliflower 
                        6.One capsicum with slice
                        7.One small chopped tomato
                        8.Two spoon red chilli powder 
                        9.One big spoon ghee
                       10.6big spoon oil
                       11.Salt according to taste
                       12. Salsa sauce

Method:-
             Pour ghee in a pan. Heat it.Fry onion in it.Add washed rice in it and fry it for two minutes.Add water and salt in it.Cover it.Cook it till soften.

Now pour oil in a pan. Heat it. Fry onion in it till golden brown.
 Take out onion from the pan.fry cauliflower than capsicum and tomato.Mix all the ingredients together and mix it properly. Mexican rice is prepared.Serve it hot.

3.Mexican tacor
               
  Ingredients for dough  :-
                    1.One and half cup mecca flour
                             2.One cup wheat flour
                             3.Three big spoon oil
                             4.Three fourth spoon salt
                             5.Oil for frying
                 Ingredients for stuffing:-
                     1.Rajma
                               2.Tomato puree
                               3.Red chilli powder
                               4Salt according to taste
                               5.One table spoon oil 
                     Ingredients for decoration
                             1.Small chopped cauliflower
                                           2.Cheese 
                                          3.Salsa sauce
    Method:-
              Mix mecca flour, wheat flour, salt and oil.Prepare dough from it with the help of water.
     
Now roll 4"diameter puri from the dough.Make holes in puri with the help of fork.Deep fry the puri and fold it in the oil.when puri will fry than take out from the oil.Keep it aside.

Pour one spoon oil in a pan and add tomato puri in it.Mix red chilli powder, salt and rajma in it.Cook it properly and mash it with the help of masher.Keep it aside.

Stuff the puri with rajma mixture.Decorate it in serving tacos plate in line.Spread small chopped cauliflower,cheese and salsa sauce on it.Mexican ta cor is prepared. serve it hot.

4.Nachar

 Ingredients for corn chips:-
                            1.100 gm mecca flour
                            2.100 gm maida
                            3.One big spoon oil
                            4.Oil for frying
                            5.Salt according to taste
 Ingredients for garnishing
                            1.One cup salsa sauce
                            2.One small chopped green chilli
                            3.Three big spoon fresh cream
                            4.Three big spoon grated cheese
                            5.Salt according to taste
Method:-
          Mix mecca flour,maida salt and one table spoon oil together.Prepare dough from it with the help of  hot water.Make small puri from it.Make holes in it with the help of fork.Cut it in to triangular shape.Deep fry it in the oil.Spread chat masala or salt on it.Corn chips are prepare.

Now put corn chips in the plate .Before serving corn chips grease the plate with salsa sauce and spread small chopped green chilli on it.Heat the cream cheese and salt together and spread on corn chips.Bake it for 5 minnutes.Nachar is prepared.Serve it with salsa sauce.

5.Enchiladas
    
 Ingredients for dough :-
                 1.one bowl mecca flour
                 2.One bowl wheat flour or maida
                 3.Three table spoon oil
                 4.Oil for frying

 Mix  both the flour together.Add salt and oil in it and prepare dough from it with the help of  hot water.The dough should be soft.Make small balls from it.Prepare 4"diameter puri from the balls.Make them holes in the puri with the help of fork.Deep fry it.You can cook puri on hot tava also.
   
  Ingredients for stuffing:-
                1.250 gm small chopped paneer
                2.One small chopped onion
                3.One small chopped green chilli
               4.Salt according to taste
               5.Some green coriander leaves.
                    Mix all the ingredients together and prepare stuffing from it.
Ingredients for baking
              1.Six table spoon grated cheese
              2.One cup hot sauce or salsa sauce
                 
Method:-
                Grease hot sauce on hot puri and fill stuffing inside it.Roll it with the help of hands.Bake it in the oven..Spread remaining hot sauce on it.

Garnish it with cheese or hot sauce.Bake it in oven for 20 minutes.Enchiladas is prepared.Serve it hot.
