South indian

South Indian dishes
              1.Sambhar
                

 Ingredients:-
                        1. One bowl arhar dal
                                    2.One bowl tomato paste 
                                   3.Potato small chopped
                                    4.Carrot small chopped
                                    5.Gourd small chopped
                                    6.One bowl Small chopped onion  
                                    7.Half bowl tamarind water
                                    8.Two three table spoon sambhar masala
                                    9.Half table spoon garam masala
                                  10.A pinch of asafoetida
                                  11.One table spoon mustard seeds
                                  12.10-12 leaves of meet ha neem
                                  13.Two -three dry red chilli
Method:-
            Wash dal properly.Add salt , turmeric powder and all chopped vegetables in it  in it.Boil it in pressure cooker.

Now heat the oil in a pan. Put asafoetida,mustered seeds meetha neemin it.fry chopped onion in it till light brown.Now add tomato and sambhar masala in it and fry it well.Add tamarind water in it.Mix this gravy in dal.If dal is thick than add more water in it and boil it.Cook it for fifteen minutes.Sambhar is prepared.Serve it with idly , dosa or uttpam.

2.Dosa
 
Ingredients:-
               1.One and half bowl raw rice
               2.One bowl urad dal
               3.One and half bowl basmati rice
               4.One table spoon fenu greek seed
           
Method:-
        Soak the rice and fenugreek seeds together for 10 -12 hours.Soak the dal seperately and grind it.Grind the rice also.Mix grinded dal and rice together.Now add  a pinch of sodium bi carbonate and salt in it. Keep it aside for 5 hours.When you want to prepare the dosa than add two table spoon semolina in it. Make dosa on non stick tava. 

3.Sambhar vada 


    Ingredients:-
          1.Two cup urad dal
               2.Salt according to need 
               3.Oil for frying
   
 Method:-

       Soak the dal for 5-6 hours.Grind it thin.Beat it with beater.Vada paste is prepared.make vada from the paste.Fry the vada in hot oil till light brown.Vada is prepared. put it in sambhar.Sambhar vada is prepared.Serve it hot.

4.Medu vada:-
           

  Ingredients:-
             1.One bowl urad dal
                   2.Two small chopped green chilli
                   3.One small chopped onion
                   4.some black pepper [thick grated]
                   5.Salt according to taste 
                   6.Red chilli powder according to taste 
                   7.One spoon small chopped ginger 
                   8.Small chopped green coriander leaves
                   9.Two table spoon grated carrot
                 10.Small chopped cauliflower
                 11.One small chopped capsicum. 

Method:-
          Soak the dal for 6-7 hours .Mix ginger and green chilli in it.Grind it thin.Now add salt and all vegetables in it.Mix it properly. Medu vada paste is prepared.make vada from the paste.Fry the vada in hot oil till light brown.Medu vada is prepared.Serve it hot with sambhar.
    
    5.Idly  
 Ingredients:-
                 1.Two cup semolina 
                         2.One cup curd
                         3.One cup water 
                         4.One table spoon salt
                         5.One table spoon eno
Method:-
          Mix semolina ,curd and salt together.Keep it aside for half an hour.

Add ENO in the mixture and pour one table spoon hot oil on it.Mix it properly.

Now grease the idli stand and pour idly paste in it.Steam it for 15 -20 minutes.Serve it with sambhar or chutney. 

6.Dal chawl idly
            
Ingredients:-
               1.One fourth bowl sela rice
                      2. One fourth bowl basmati rice
                      3.One fourth bowl urad dal
                      4.Salt according to taste
                      5.ENO [optional]
Method:-
            Mix both the rice together and soak it fot 5-10 hour.Soak the dal seperately.Grind it seperately like semolina and mix it properly.Add salt in it. Cover it and put it aside for 8-10 hours.If paste is not fluffy than add ENO in it.Grease the idly stand and fill the pase in stand.Cook it in steam.Idly is prepared.  

7.Coconut chutney
             
 Ingredients:-
                    1.One cup grated raw coconut
                            2.One cup curd
                            3.Two table spoon roasted channa
                            4.Two green chilli
                            5.One table spoon ginger paste 
  Ingredients for temper:-
                   1.Asfoetida
                           2.Musterd seeds 
                           3.Meetha neem
                           4. Two red chilli
          
Method:-
         Mix all the ingredients together except salt and curd.Grind it thin.Now add half cup curd and salt in it.      

Temper it with Asfoetida,Musterd seeds,Meetha neem,red chilli.Serve irt with idly or sambhar.

8.Rasam
  Ingredients for rasam powder 
                1.Five red chilli
                       2.Half table spoon cumin seeds
                       3.Three table spoon coriander seeds
                       4.One table spoon fenugreek seeds 
                       5.One table spoon oil
                       6.Meetha neem
Method for rasam powder 
                     Put all the ingredients in hot pan with oil.Roast it on slow flame till smell comes from it.Let it cool and grind it in mixture .Sieve it and fill it in air tight container.Rasam powder is prepared.       

                          

  Ingredients for rasam
             1.Four big size tomato
             2.Black pepper powder according to taste 
             3.One table spoon sugar
             4.Half table spoon dry ginger powder 
             5.Half table spoon turmeric powder 
             6.Salt according to taste 
             7.Three table spoon rasam powder  
  Ingredients for temper:-
                   1.Asfoetida
                           2.Musterd seeds 
                           3.Meetha neem
                           4. Two red chilli
          Method:-
                             Boil the small chopped tomato in one cup of water.Mix tomato in it.Add salt ,turmeric powder in it and cook it for 10 minutes.Add rasam powder in it.Cook it till thick.Temper it with asfoetida,musterd seeds,meetha neem,red chilli.Serve it .
